Jamie Oliver's Blushing Spaghetti With My Own Twist

Hey guys! Well so much for getting back on track when I only ended up posting once last week, I apologise for that but I'm still kind of taking my time to regain inspiration. Also, I honestly thought it was Tuesday today, Bank Holiday always seems to mess up my days haha, if I knew I would've posted yesterday but never mind because I'm still here ;)

So today I'm here with a recipe from my favourite chef ever - Jamie Oliver! But of course since I like to be unique and all that, I changed the recipe a bit.

Serves 2

Ingredients

- 2 cloves of garlic
- 8 ripe cherry tomatoes
- 1/2 a bunch of fresh flat-leaf parsley
- 160g dried spaghetti 
- olive oil
- 2 tablespoons sun-dried tomato paste
- 300g prawns or mussels (or in Jamie's recipe - clams)
- 1 glass of rose' wine (Jamie Oliver recommends Venetian Pinot Grigio blush)
- extra virgin olive oil


TIP: If you decide to make this dish to serve 4 then I recommend to add more than 300g of spaghetti and also to just use 1 glass of rose' wine because I made this dish for 4 and I made the mistake of pouring 2 glasses of wine which made the sauce way too watery.

STEP 1 - Preparation

Make sure to have everything prepared before you start cooking because it's quite a quick dish! 
Firstly, peel and finely slice the garlic and quarter the tomatoes. Secondly, very finely slice the parlsey stalks, then roughly chop the leaves and put aside for later.

STEP 2 - Cooking

Cook the spaghetti in boiling water according to packet instructions. Roughly 5 minutes before the spaghetti is ready, place a large frying pan on high heat. After 2 minutes, add a swig of olive oil, followed by garlic, tomatoes, parsley stalks and sun-dried tomato paste. Shake around for a bit, and then add 300g prawns or mussels. After 30 seconds add the wine, pop the lid for 1 minute and then remove so the wine evaporates. After that you should be ready to drain your pasta, add some parsley leaves and extra virgin olive oil, and give it all a good toss together. Also, make sure to check if it needs any seasoning.

STEP 3 - Serving

Divide the pasta between two bowls, followed by the prawns or mussels and the sauce. Tuck in!
